Warm Mango Chicken Salad

Ingredients

  • ½ small bag lettuce leaves, washed
  • 1 small chicken breast, skin off
  • ½ small mango, sliced
  • ½ small avocado, sliced thinly
  • ¼ cucumber, sliced thinly lengthways
  • 4 cherry tomatoes, halved
  • 2 tbsp. mango chutney
  • 1 tbsp. balsamic vinegar
  • 2 tsp. hot water
  • Sprinkle of rosemary leaves
  • Cooking spray
  • Salt & Pepper to taste

Method

  1. Preheat BBQ or griddle pan on Med to High heat.
  2. Flatten chicken breast, between non stick baking paper with seasoning of S & P and sprinkle of rosemary.
  3. Spray Chicken with cooking spray and cook for 4-5 mins each side or until cooked. Take off, place on plate and cover with foil to keep warm.
  4. Combine the salad mix, mango, avocado, cucumber, cherry tomatoes, and toss lightly to combine.
  5. Slice the chicken into thin slices and place on the salad.
  6. To serve, combine the mango chutney, balsamic vinegar and water and pour over the salad.

Lemon Meringue Pie Parfait

This lemon meringue pie parfait recipe is a wonderful dessert and very easy to make. It’s great tasting and you will love it. Lemons can help you to lose weight and are also good for you overall health.

Ingredients

2 egg whites
1/4 cup honey
Pinch of cream of tartar
Pinch of Kosher salt
1/2 teaspoon vanilla extract
1 (14 ounce) can coconut milk, cold
2 cups Greek lemon yogurt
1/2 cup granola

Directions

In a double boiler on medium heat, whisk together egg whites, honey, cream of tartar, and salt. Whisk constantly until honey is dissolved and whites are frothy.
Transfer egg and honey mix to mixing bowl. Using an electric mixer, add vanilla, starting on low and gradually increasing to high. Whip egg until stiff peaks form and egg mix is white and glossy (about 10 minutes).

Separate coconut fat from coconut liquid. Reserve liquid for another use.
In clean mixing bowl, place coconut fat and whip until it resembles whipped cream. Carefully fold in lemon yogurt.
In blender or food processor, add granola. Pulse until granola is a fine crumb.
Begin to assemble parfait. In tall glass, layer granola, yogurt, and meringue with the last layer being the meringue. Serve.

TIP: if you have a kitchen torch, lightly brown the top layer of meringue before serving.

Veggie Packed Minestrone Soup

Ingredients
2 tablespoons extra-virgin olive oil
2 cups chopped onions (2 medium)
2 cups chopped celery (4 medium stalks)
1 cup chopped green bell pepper (1 medium)
4 cloves garlic, minced
3 cups chopped cabbage
3 cups chopped cauliflower (about ½ medium)
2 cups chopped carrots (4 medium)
2 cups green beans, cut into 1-inch pieces, or frozen, thawed
8 cups low-sodium vegetable broth or chicken broth
2 cups water
1 15-ounce can tomato sauce
1 14-ounce can diced tomatoes
1 15-ounce can kidney or pinto beans, rinsed
1 bay leaf
4 cups chopped fresh spinach or one 10-ounce package frozen chopped spinach, thawed
½ cup thinly sliced fresh basil
10 tablespoons freshly grated Parmesan cheese

Preparation
Active 1 h
Ready In 1 h 45 m

Heat oil in a large soup pot or Dutch oven (8-quart or larger) over medium heat. Add onions, celery, bell pepper and garlic; cook, stirring frequently, until softened, 13 to 15 minutes.
Add cabbage, cauliflower, carrots and green beans; cook, stirring occasionally, until slightly softened, about 10 minutes more.
Add broth, water, tomato sauce, tomatoes, beans and bay leaf; cover and bring to a boil.
Reduce heat and simmer, partially covered, until the vegetables are tender, 20 to 25 minutes.
Stir in spinach and simmer for 10 minutes more.
Discard the bay leaf. Stir in basil. Top each portion with 1 tablespoon cheese.
