Warm Mango Chicken Salad
Ingredients
- ½ small bag lettuce leaves, washed
- 1 small chicken breast, skin off
- ½ small mango, sliced
- ½ small avocado, sliced thinly
- ¼ cucumber, sliced thinly lengthways
- 4 cherry tomatoes, halved
- 2 tbsp. mango chutney
- 1 tbsp. balsamic vinegar
- 2 tsp. hot water
- Sprinkle of rosemary leaves
- Cooking spray
- Salt & Pepper to taste
Method
- Preheat BBQ or griddle pan on Med to High heat.
- Flatten chicken breast, between non stick baking paper with seasoning of S & P and sprinkle of rosemary.
- Spray Chicken with cooking spray and cook for 4-5 mins each side or until cooked. Take off, place on plate and cover with foil to keep warm.
- Combine the salad mix, mango, avocado, cucumber, cherry tomatoes, and toss lightly to combine.
- Slice the chicken into thin slices and place on the salad.
- To serve, combine the mango chutney, balsamic vinegar and water and pour over the salad.
