Mango Chicken Salad Recipe

Warm Mango Chicken Salad

Ingredients

  • ½ small bag lettuce leaves, washed
  • 1 small chicken breast, skin off
  • ½ small mango, sliced
  • ½ small avocado, sliced thinly
  • ¼ cucumber, sliced thinly lengthways
  • 4 cherry tomatoes, halved
  • 2 tbsp. mango chutney
  • 1 tbsp. balsamic vinegar
  • 2 tsp. hot water
  • Sprinkle of rosemary leaves
  • Cooking spray
  • Salt & Pepper to taste

Method

  1. Preheat BBQ or griddle pan on Med to High heat.
  2. Flatten chicken breast, between non stick baking paper with seasoning of S & P and sprinkle of rosemary.
  3. Spray Chicken with cooking spray and cook for 4-5 mins each side or until cooked. Take off, place on plate and cover with foil to keep warm.
  4. Combine the salad mix, mango, avocado, cucumber, cherry tomatoes, and toss lightly to combine.
  5. Slice the chicken into thin slices and place on the salad.
  6. To serve, combine the mango chutney, balsamic vinegar and water and pour over the salad.
